Selected propionic acid bacteria culture. Culture containing Propionibacterium freudenreichii. Freeze-dried cultures should be stored at -18°C or below. Recommended dosage: 5 units/ 5000 l milk. The culture is primarily used for the production of Swiss-type cheeses, such as Emmental, Gruyère, Greve, Maasdam and similar types where the typical propionic acid aroma and eye formation are desired. Agitate the mixture for 10-15 minutes to distribute the culture evenly.
